In the Lauter Tun, hot water is added to the grist to extract sugar and starch from the grist.  When the process is complete (4-6 hours), the Lauter Tun is turned off.  It then acts like a sieve allowing the surgery water to drain off.  A warm, sweet liquid called "wort" is then transferred over to the Fermenters to begin the process of making alcohol.
